Often, when something becomes fashionable, it loses its authenticity because it gets copied and mass-produced. People who buy into it frequently don't appreciate or understand the tradition or the art behind the concept. This is true of many of the culinary arts, Sushi and Sashimi, in particular. Yamato, which is the old world name for Japan, is a traditional Japanese restaurant in the very best sense of the word. It is a family run restaurant where true Japanese food is lovingly prepared in a kitchen where only fresh ingredients are used to make the Tofu, sauces and noodles that in most other restaurants, are usually out sourced. All of the other ingredients necessary are imported by Yamato, directly from Japan.
